Tap the red Trashcan icon on the right to delete the thread. Repeat these steps for all of the conversations you want to delete from your Apple Watch.

Considering how tedious the process is, you should consider deleting text messages as one among several ways to free up some data on your device.
Drawbacks of Deleting Messages from Apple Watch
While many apps sync between the Apple Watch and iPhone, Messages is not one of them. Conversations you delete from the Watch will still be on your iPhone, and threads you clear on your phone may remain on your Watch. What this means is that outside of some organizational improvements and added storage space, deleting messages from the Apple Watch has few practical benefits.
