 Donna Hay&#8217 s one-bowl chocolate and coconut muffins By You Magazine - October 7, 2018 Quick and easy to whip up, Donna Hay’s recipe for one-bowl chocolate and coconut muffins will satisfy any sweet tooth. From Modern Baking by Donna Hay MAKES 12
300g self-raising flour
175g light brown sugar
40g desiccated coconut
25g cocoa powder, sifted
250ml milk
125ml vegetable oil
2 medium eggs, lightly beaten
2 tsp vanilla extract
200g dark chocolate (45-55 per cent), chopped
1. Preheat oven to 180C/gas 4.
